History Kvas/Gira is an ancient beverage that has been made for almost 1000 years in Russia and nearby countries. It can be brewed from simple ingredients such as leftover rye bread and yeast, sweetened with sugar, honey, birch sap, berries or fruit. Kvas is similar to the "small beer" made by early American colonists and root beer made by farm families in the U.S. It is mildly carbonated by the yeast fermenting the sugar, but is not aged long enough to more than a trace of alcohol. While the Gubernija brewery was built in 1665, the company began producing kvas in 1999. The hundred-year-old recipe uses specially baked and roasted rye bread crumbs. Review Smells a bit like rusty well water, but the taste is mellow and refreshing. Definitely tastes like a piece of rye bread with extra honey & molasses & nutty maple syrup-like flavors. It doesn't have a lot of carbonation, so it doesn't have the perk on the tongue of more active sodas. Maybe the low carbonation is more like a traditional home brew kvass, which I've never tried. As a mass-produced soda, though, I'm wishing for a stronger flavor, maybe a little like a strong dark Malta soda.
